Pitman arms are usable. The snout has a hole in bottom so wouldn't return oil correctly. Ni99 rod to build up and burr in die grinder to shape. The very end of snout will not be square to the shaft so will need some weld. The inside of the hub will likely be like this guy's.

1. Do all the gears need to be installed in order to lubricate the axle/pin? Watching the video by DoRite Fabrication, the gears throw oil on the axle, push rod assembly, etc. And it appears the big driven gears pours oil on the smaller drive gears which dumps oil on the axle? The push rod I wouldn't need anymore since I'm not going to pump water. But the axle/pin (not sure proper name) would need lubrication.
2. As the entire head assembly pivots on the pin coming from the tower, how does that get lubricated?
To recap, since I'm just using for pleasure, but want the wheel to turn, I''ll need to lubricate the axle/pin that the wheel hub turns on and the head assembly where it sits on the tower pin. Please correct my nomenclature on these parts.

I’d probably put both sets of gears in it as they help with the oil circulatory system. You could probably leave out the yoke and pitman arms.
The pump rod can act like a safety in case the mast pipe fails. If it fails without a pump rod, the windmill is coming down. With the pump rod, it will stay up until the pump rod breaks or otherwise is compromised.
This is how the mast pipe gets lubed.

I agree with Michael on the gears but personally wouldn't worry about the pump rod, just My opinion. !!

The crank gears should be there. They pick up and transfer oil to the pinion gears, which the spout washer picks up and puts in the snout, for the mainshaft bearings. Pitmans and Yoke / crosshead / can be left out. When I put my spinner up, I brazed the mastpipe nut with a piece of tin over the opening to keep oil from running down inside it. If you don't have overhead hardware in, you don't need to oil what's not there. I pulled to tail over, and diconnected the brake so that it turns slow. If you leave the yoke in, thats ok too. It will just rest on the mastpipe nut.
