I used lots of blue painters tape to mask and rattle can. Not perfect and kind of crude but helps that you see it from a distance.

And squinting a bit helps too.

I have found that its pretty easy to paint directly over the old lettering if visible at all. Often I paint the whole thing with Vansickle Aluminum and sometimes when you can't see the lettering it shows up after its sliver where you can use it for a guide. Really, I have no artistic ability at all and it comes out as good as using a paper stencil that is never perfect either and hand painting seems to last much longer for me than spraying. my 2 cents

I paint over the old when it is there. You also can but the separate letter stencils. I have them from 3 inch up to nine inch. If the old letters are hard to see you can wet the spot and it will sometime bring out the letters. Then I out line them with a black marker.

You are all correct. Offset lighting is a clue also. Water, to wet, maybe paint thinner to wet. ( I did not say paint remover) All else fails, I have original stencils. Geez, I think I'm supposed to make up a set for someone else here. Ed, that guy in Freeman has stencils, yes. I spent days making him up almost everything I had. LOL

Is Red Oxide the most accurate color for Aermotor vane lettering?
